Wine 101must weightfromA measurement of the sugar content of unfermented grape MUST. Knowing the must weight helps winemakers forecast the finished wine's POTENTIAL ALCOHOL. The must weight is usually measured by using either a REFRACTOMETER or a HYDROMETER. The three scales used to quantify the must weight are BAUMÉ, BRIX, and OECHSLE. See also SPECIFIC GRAVITY.
