The term “extra dry” (or extra sec) appears on SPARKLING WINE labels to indicate that a wine is fairly DRY, but with some RESIDUAL SUGAR. Extra dry sparkling wines usually contain 1.2 to 2 percent sugar, making them sweeter than BRUT but drier than SEC, DEMI SEC, or DOUX. extra sec A French term meaning “EXTRA DRY.” exuberant see Glossary of Wine Tasting Terms, page 613
