Surdo, sometimes called vinho surdo, is the Portuguese term for grape juice that has been prevented from FERMENTING by the addition of ALCOHOL. None of the grape sugar has been converted to alcohol, so surdo is very sweet. It's used to sweeten other wines, particularly MADEIRA. The French MISTELLE is a similar solution.
