overcropping

A VITICULTURE practice where too many buds are left on the vine during winter PRUNING. This produces a very large crop, which produces lower-quality grapes. The large grape crop has trouble ripening and will be lower in desirable attributes such as color, sugar, and flavor. Quality growers use crop management programs to develop the optimum balance of YIELD and quality.
