Neuchâtel [neuh-shah-TEHL] Located north of Geneva, this Swiss canton is well known for its white wines made from CHASSELAS grapes. These Chasselas wines are LIGHT and DRY, with a touch of effervescence, the latter the result of being bottled SUR LIE, which produces a second fermentation in the bottle. The vineyards, located on the north shore of Lake Neuchâtel, are planted mainly with Chasselas, although some PINOT NOIR is grown as well. The Pinot Noir wines, which are considered some of the best Swiss reds, are often produced in a pale ROSÉ style known as IL DE PERDRIX ("eye of the partridge").
