must weight

A measurement of the sugar content of unfermented grape MUST. Knowing the must weight helps winemakers forecast the finished wine's POTENTIAL ALCOHOL. The must weight is usually measured by using either a REFRACTOMETER or a HYDROMETER. The three scales used to quantify the must weight are BAUMÉ, BRIX, and OECHSLE. See also SPECIFIC GRAVITY.
