mycoderma
[my-koh-DER-muh]
A class of bacteria that converts ethyl alcohol (see ALCOHOL) into acetic acid (see ACIDS) and ETHYL ACETATE and spoils wine with a vinegary flavor and odor. Wine affected by mycoderma is sometimes referred to as PIQUÉ.
