APPELLATION located in the foot-hills of the Pyrenees near the town of Pau in SOUTHWEST FRANCE. It produces only white wines, which are noted for their distinctive FLORAL and spicy (cinnamon and cloves) nuances. The grape varieties used are the local favorites—Courbu, Gros Manseng, and Petite Manseng. The wines can be DRY or sweet, the latter generally only if the grapes are left on the vine until they are shriveled and sugary, which usually occurs in late November or early December.
