Hautes-Côtes de Beaune AC
[oht koht duh BOHN]

A separate APPELLATION located in the beautiful hills behind the famous CÔTE DE BEAUNE area in France's BURGUNDY region. Both red wines, made from PINOT NOIR, and white wines, made from CHARDONNAY, are produced by the twenty-nine villages associated with the appellation. The altitude of these vineyards is higher than that of the Côte de Beaune vineyards, but the exposure to the sun is not as good, so the grapes have a more difficult time ripening. The wines are therefore never quite as FRUITY or full-bodied (see BODY) as those from the Côte de Beaune area. There are several producers, however, who keep YIELDS down and use new oak barrels to produce some superb wines.
