Hautvillers
[oh-vee-LEHR]

A village on the Marne River just north of Epernay in France's CHAMPAGNE region. Hautvillers is where the Benedictine Abbey of Dom Pérignon fame is located. It's here that Dom Pérignon, the seventeenth-century cellarmaster of the abbey, is credited with developing the art of blending wines to create champagnes with superior flavor. He's also known for his work in preventing champagne bottles and corks from exploding. He did this by using thicker bottles and tying the corks down with string.
