Elbling
[EHL-bling]

A very productive white-wine grape with origins prior to the Middle Ages—possibly to Roman times. Elbling’s grown mainly in Germany’s MOSEL region, particularly in environments where RIESLING has trouble ripening. This grape produces rather ordinary wines with neutral flavors and high ACIDITY. Although much of it is made into SPARKLING WINE (called SEKT in Germany), Elbling is occasionally found as either a DRY or medium-dry STILL WINE.
