fermentazione
[fayr-mayn-tah-TSYOH-nay]

Italian for “fermentation.” On labels of sparkling wines (like SPUMANTE), the term fermentazione naturale indicates that carbon dioxide gas has been instilled in the wine through a natural method (usually the CHARMAT PROCESS).
