Aszú

The Hungarian term for grapes infected with BOTRYTIS CINEREA and therefore shriveled and full of CONCENTRATED flavors and sugar. TOKAY ASZÚ (or Tokaji Azsú), the famous DESSERT WINE, is made from botrytis-infected FURMINT grapes.
