Ausbruch

A quality category for Austrian wines. Wines allowed into this category are made from grapes that have been infected with BOTRYTIS CINEREA and then dried naturally. This shrivels the grapes, thereby concentrating the sugar. The superior wine made from these grapes is very sweet but has enough ACIDITY for proper BALANCE. The required sugar levels (a minimum 139° OECHSLE) place Ausbruch wines between BEERENAUSLESE and the highest-quality level, TROCKENBEERENAUSLESE.
