German for “soil” or “ground.” Like the French GOÛT DE TERROIR, bodengeschmack, which means “taste of the soil,” refers to wines with a flavor that reflects the vineyard in which the grapes were grown. RIESLING grapes grown in slate-based terrain, such as that found in the MOSEL-SAAR-RUWER region, are said to absorb a slate flavor and transmit it to the wines.
