Cadillac AC
[kah-dee-YAHK]

A small APPELLATION located in the area around the picturesque little town of Cadillac in the southern end of the PREMIERES CÔTES DE BORDEAUX in France’s BORDEAUX region. It sits on the Garonne River across from CÉRONS and BARSACThe appellation is only for white wines made from SÉMILLON, SAUVIGNON BLANC, and MUSCADELLE, which must be semisweet or sweet (minimum of 1.8 percent RESIDUAL SUGAR). Although some of the grapes in the Cadillac AC are infected by BOTRYTIS CINEREA, the resulting wines aren’t generally as intense or luscious (nor are the prices as high) as those from SAUTERNES, which is just across the river.
