Caluso Passito DOC
[kah-LOO-soh pah-SEE-toh]

DOC area located in the northern part of Italy’s PIEDMONT region north of Turin. The vineyards are located in thirty-five different villages in and around the town of Caluso. The rich, sweet DESSERT WINES are made from the ERBALUCE grape by the PASSITO process—grapes are dried on mats so that their sugars and flavors are concentrated before they’re made into wine. The wines are then AGED for a minimum of 5 years (different VINTAGES may be combined). This area also produces Caluso Passito Liquoroso, a wine FORTIFIED with grape ALCOHOL to a minimum alcohol level of 17.5 percent. See also ERBALUCE DI CALUSO DOC
