transfer method
A method of making SPARKLING WINE that's similar to MÉTHODE CHAMPENOISE. The major difference is that—instead of the RIDDLING and DISGORGEMENT steps—the wine, after a second fermentation in the bottle, is transferred to a pressurized tank where it passes through a filtration system to remove sediment. Sparkling wines made this way may be labeled "bottle fermented," "fermented in the bottle," or "transfer method."
