clarify; clarification

The process of making wine clear by removing particles of yeast and grape matter (pulp, skins, stems, and seeds). One way to clarify wine is to simply let the particulates fall to the bottom of the storage container, after which the wine is racked (see RACKING). Sometimes the wine is fined (see FINING) to assist in getting the particles to separate from the wine. FILTERING and STABILIZATION may be used as well. The objective is to make a wine that will be clear and bright after bottling.
