Salice Salento DOC
[SAH-lih-chay sah-LEHN-toh]

A DOC zone located around the COMMUNE of Salice Salento on the Salentine peninsula in southeastern Italy (the "heel of the boot"). It's in the APULIA region and produces some of the regions better wines. The Negroamaro grape makes up at least 80 percent of both the ROSSO and ROSATO wines. CHARDONNAY makes up at least 70 percent of the BIANCO wines. VARIETAL wines from Pinot Bianco (PINOT BLANC) and ALEATICO also are made—both require 85 percent minimums of these varieties.
