Schilcher
[SHEEL-shyuh]

A specialty wine of western Styria, which is in the most southern part of Austria. Schilcher is made from Blauer (blue) Wildbacher grapes and vinified DRY and can be found in both STILL and SPARKLING styles. This wine's color is described by many as shimmeringly iridescent, oscillating between white, pink, and red. Indeed, the Middle High German word for such a change of colors is "schillern" or "schilchen." Although Schilcher is often called a ROSÉ, many Styrians object to such a label for this unique wine. Schilcher has a lively ACIDITY; a fresh, fruity flavor; and a spicy BOUQUET reminiscent of strawberries. It should be drunk young.
