I'm generally of the mind that it's tough to make a mistake when it comes to wine and food pairings. Are there time-tested guidelines for certain wines that pair exceptionally well with certain foods? Absolutely. Are there also some unexpected, against-the-grain combinations that strike your fancy anyway? You bet. (Red Wine with Fish, anyone?) By and large, if you like what you're eating and you like what you're drinking, you'll survive. Trust me.Once in a while, though, I come across a pairing ...

Roquefort with Sauternes. English Stilton with Port. Some classic wine and cheese pairings are classic for good reason. But Tomino in Vinaccia? (That's buffalo milk cheese from the Campania region of Italy, aged 250 days under the lees of the red grape "maima di de concilis.") Or Riesling Sylvaner? (Cow's milk cheese from western Switzerland that's washed with Riesling Sylvaner wine during the cheese's aging process.)Not exactly classic in the Roquefort-Sauternes kind of way, these cheeses instea ...

This article by Cathy Huyghe ran on the Closing Time page of the August 2009 issue of Sommelier Journal. If you were lucky, you found them at your school too.You found that one group of people, or that one professor, or that one staff person who worked in a far-off corner of the Registrar's Office who thought 'drinking in college' should mean Pinot Noir from a glass rather than vodka from a plastic cup. For those of us lucky enough to find them it was 'so long, keg party' and 'hello, tasting ...

The menu for the Duckhorn Wine Dinner tonight was fairly by-the-book.Pinot Noir from the Anderson Valley with pan-seared duck breast for the first course.Merlot (from Napa) with short rib ragout, and Cab (also from Napa) with sirloin. Then Zinfandel with a bittersweet chocolate pavé for dessert.Except for the dessert course, all the pairings were right on. The Pinot Noir with the duck, especially complemented by the mushrooms in the risotto, was a natural fit. The Merlot would have been, for me, ...

However the Boston Harbor Hotel's 20th annual Wine Festival should be proof positive for even the most skeptical that Boston has truly arrived as a world class wine city. The Wine Festival, not incidentally the country's longest-running, is a nearly four-month marathon of wine and food pairing events covering virtually every grape variety from vintners across the globe. Events range from pairings ...

The rest of the store is dancing with hand-selected gourmet gifts and pantry products from around the world.South End Formaggio, as a wine ...

Jeffrey Roberts, author of The Atlas of American Artisan Cheese, toys around with the the idea of drinking beer with cheese rather than wine. Why? Both wine and cheese have tannis, Roberts said, and in his opinion they tend to duke it out for taste priority. Beer's tannin-less composition, on the other hand, cuts the fattiness of the cheese and balances the taste experience. That's a fair point.Roberts also thinks a general audience finds beer to be more approachable than wine, "even if what you ...

A few weeks ago I received a book in the mail, unsolicited, from a publisher who thought I'd be interested in the subject matter. I am interested in the subject matter – it being wine and all – but a few minutes of page turning told me that I was not interested in the book.It looked, well, boring. And it looked like material I could get from any of the too-many books I already had on my shelves. So that's where it's going to stay – on the shelf – until the next time I spring clean my library or ...

Suzanne Pirret does not follow many of the rules. You'd know this if you happened to see her noon-time cooking demonstration at Northeastern University yesterday. No one actually cooks wearing a dress like that, just like no one is allowed to make chocolate cookies like that that have the consistency of fudge, are rolled in sugar, topped with sea salt, and then dunked – as Pirret advises at the end of her no-ingredient-list-only-prose recipe – in a glass of 2004 Vin Santo del Chianti Classico fro ...

(This article also ran in today's Gloucester Daily Times.)Wine at Thanksgiving usually means just-released Beaujolais Nouveau, or an earthy Pinot Noir, or a fuller-bodied white like Chardonnay, or an aromatic, food-friendly white like Gewurztraminer or Riesling. But this year we're seeing the price of Beaujolais Nouveau skyrocking and demand tanking, so much so that several local wine shops I consulted won't even be carrying this most popular vin de primeur of all. This year too, with a budget ho ...

By Ada BrunsteinOn November 7, during a historic election week, in a historic city, amid the lingering threat of another depression, 13 people sat in what used to be the manager's quarters of the U.S. Trust Bank and drank a historic wine. The Seafood Room of the Oceanaire restaurant at 40 Court Street is an intimate room in what is otherwise a grand building. The high ceilings, pillars, and oversized ceramic vases would evoke opulence even without this building's impressive pedigree. But the car ...

Note: This article ran in today's Gloucester Daily Times. There's a certain moment when you realize a change is in the air. It's when you pull a light jacket from the closet before you head out the door in the morning. It's when you add a heavier blanket to cover your bed at night. And, when you're thinking about what's in your glass, it's when you realize you don't want light, refreshing, cooling anymore. Why is it that everywhere I go, from a kid's baseball game to a black-tie event, the conversations with either acquaintances or total strangers always comes back around to wine? The floodgates open once I mention my work – I'm a wine journalist and lifelong student of all things wine. 'How did you learn so much about wine?' 'What's your favorite wine?' or 'You've got the best job in the world,' are the common responses. It often amuses and gratifies me that I'll be chatting with my Dentist or my mother's Cardiologist, or even the CEO of a major firm on a plane ride, and once my profession is revealed, it's the only topic of conversation. And believe me, I'm not one who favors talking about myself. What I do like is that wine talk brings down any barrier to communication since I generally end of demystifying some aspect of wine, and darn it, I get a little respect.

When you have some good friends for diner and you know you will linger on the deck afterwards, I feel it's always worth opening something you might now otherwise drink on a weeknight. Such was the case with that '02 Calistoga Cellars-a pleasant surprise, since I can't recall exactly where I got it or who gave it to me. Ends up my dinner guest and friend Jen had just recently bought a couple of bottles of the '05 Calistoga Cellars, saying it was such a good California Cab for the price. Coincidence in this vast world of wine...

Imagine the benefits of an online tasting journal. No more random bits of paper with "2005 Boxler Pinot Gris!!!" scribbled on them. Or "Muscat = spice, apricot." Or "Say wines from Alsace, not Alsatian wine. An Alsatian is a dog."No more standing around a wine shop racking your brain, trying to remember the name of that Napa Syrah that completely threw you for a loop. No more frustrating yourself, or your friendly neighborhood retailer, as you struggle to describe the wine or even its label: "It ...

A three-man band tuned up in the bar area while we waited for the Red, White and Bleu wine and cheese tasting to start tonight at Les Zygomates. The band's riffs and starts. The brick design detail at the bar. The weathered-by-heavy-traffic hardwood floor. The wine bottle displays stepping up the side walls. The floor-to-ceiling front windows looking out onto the Leather District. It's all of these details that make this wine bar and bistro on South Street a great place to be as the sun goes down ...

Hand-written shelf talkers the size of a notepad hover near selections around the Lower Falls Wine Co. in Newton Lower Falls. And they cracked me up. "I had a love affair with this wine last night..." one shelf-talker said. As if the wine were something reciprocal. As if love affairs lasting one night were worth having. Hmmm..."We had an amazing experience at this winery last February and the wines have finally arrived!" another shelf-talker said. As if they were waiting all the while with bated bre ...

By Grace GuFor a long time – about 2400 years to be precise – scientists and gourmets searched for a term to describe the delectably meaty, savory characteristic that dominates foods ranging from aged parmigiano to soy sauce. It wasn't until 1907 that Japanese professor Kikunae Ikeda identified the source of this unique taste, which was neither sweet, nor salty, nor bitter, nor sour: the breaking down of an amino acid called glutamate through processes like curing, smoking, ripening, and aging. ...

The Butcher Shop's list of wines by the glass is, arguably, the best in town. Okay, I admit I'd have a soft spot for anyone who offers me a 2006 Trimbach Muscat, by the glass or the bottle or even the magnum, for that matter. But which restaurants' wine lists, other than those like The Butcher Shop that Cat Silirie outfits, can boast such a thing?None, at least none that I know of. Silirie gets wines no one else in town gets, and she isn't stingy about sharing them. The Trimbach Muscat is a case ...

Since last September or so a group of dedicated book (and wine and food) lovers has come together the last Friday of the month at Cornerstone Bookstore in Salem. Yes, we all get the book of the month and yes, we all more or less read it all the way through and yes, we come prepared to talk about it. And we do talk about it. But we also drink the wine. This is the only book club I know where wine is an integral part of the discussion, "integral" for two reasons: the books we read are about wine / ...

How does someone who's 25 years old come to be Wine and Beverage Director for Jody Adams at Rialto? In other words, how did you get the job?If you are asking me I would say I was lucky! But most people who know me believe that I have depth of knowledge on wine, particularly Italian wine. Jody is a luminary chef and restaurateur, she saw a passion and drive in me that I think spoke to her. She is also a very smart entrepreneur and she saw my age as a huge asset, which many people might have not. ...

Merchants Liquor Mart in Danvers donated the wine and beer for the Harborlight Montessori School's benefit auction in North Beverly last night. The whites were on ice in a large bin, the reds were open on the table at the cash bar. The wines were nothing fancy or expensive – Big House Red and Ecco Domani Pinot Grigio are two of the wines I saw – but the point is that it was there. It was there because the auction was a festive occasion; aside from the auction itself, the school celebrates its 35 ...

Tonight at Stir, Barbara Lynch's demonstration kitchen in the South End, a renaissance man named Check Draghi led ten very privileged guests through his version of a mini rare and unusual wine list. It was an exercise in carpe diem: enjoy these wines because you'll probably never drink them again. All the wines were Italian in origin (like Draghi himself), all were completely unknown to me before tonight, and all had histories that are deeply obscure and convoluted.
